Haagse bluff is an old-fashioned dessert of beaten egg whites with sugar and berry juice. The traditional recipe contains a lot of sugar to make the sour berry juice less sour. We have a healthier version.

Ingredients
- 200 grams of strawberries
- 1 tablespoon honey
- 1 egg white
- 1 wholemeal rusk or almond shavings
Prepare
- Clean the strawberries. Puree the strawberries into juice with the immersion blender.
- Strain the juice so that there are no chunks in it. Stir the honey through the strawberries.
- Beat the egg whites well with the mixer. Then carefully pour in the strawberry juice while you keep mixing. Beat until firm peaks form.
- Divide the Haagse bluff over 2 bowls, serve with some crumbled wholemeal rusk or almond shavings.
Pay attention!
This is a dessert in which raw egg white processed. Therefore, do not give a bluff from The Hague to people with low resistance such as the sick, vulnerable elderly or very young children. Pregnant women should also avoid using raw eggs.
