1 red pepper

3 tablespoons stir-fry oil

400 grams lean beef steaks, cubed

3 shallots, quartered

2 aubergines, roughly chopped

200 ml coconut milk

½ tablespoon Thai green curry paste

125 ml meat stock

2-3 tablespoons Thai fish sauce

1 tablespoon brown sugar

1 bag of stoneleeks (8 pieces), cut into pieces of 4 cm

2 tablespoons fresh basil, sliced

300 grams of pandan rice
Preparation
Roll pepper between hands, cut off top and shake out seeds. Cut pepper into rings. Heat oil in a frying pan and sear the meat for 5 minutes while stirring. Add red pepper, shallot and aubergine and fry for 3 minutes. Stir in coconut milk, curry paste, stock, fish sauce and sugar. Cook the meat covered for at least 2 hours on a very low heat, possibly with a flame distributor under the pan. Stir in the Stoneleeks and stew the dish without a lid for another 5 minutes. Sprinkle basil over it. This dish is delicious with pandan rice.
