Spirulina and mackerel with whipped cream
Ingredients
5 grams of spirulina
4 large, very fresh mackerel
100 grams of liquid cream
4 grams of powdered wasabi
4 grams of icing sugar
Ask your fishmonger to lift the mackerel fillets.
Check that there are no more edges, then cut the fillets at an angle to obtain diamonds.
Pour the very cold cream into a cold stainless steel bowl.
Whisk it up.
When it has gained volume, add the icing sugar, spirulina and wasabi.
Reserve this whipped cream in the refrigerator.
When ready to serve, pour the cream into a piping bag and place a small amount on each piece of raw fish.
The advantages of spirulina
Containing 70% of proteins, iron, mineral salts, extremely rich in amino acids (containing all the known ones) and in vitamins A, B, C, D, EFK, the spirulina has in more good taste. So rather than swallowing capsules why not cook it as a starter, main course or dessert. This seaweed comes in powder form, dissolves very easily and is a real nutritional asset to your kitchen.

Spirulina and Eggs
Ingredients
20 grams of spirulina
4 large organic eggs
5 cl of olive oil
Long pepper
2 tablespoons of flaked nori (organic or Asian store)
Bread
Fine salt
Mix all the ingredients for the sauce, spirulina, nori, olive oil, freshly ground long pepper.
Cut bread sticks, plan about 4 mouillettes per person.
Spread them of sauce.
Dive your eggs 3 minutes 30 in salted boiling water
Enjoy with the mouillettes.
