600 grams of red fruit of your choice

8 teaspoons flour

4 tablespoons vanilla essence

Preparation
Soak the gelatin and dissolve it in warm water. Beat the egg white until stiff. Puree the red fruit to a purée, but keep a few for garnish. Spoon the gelatin solution with the fruit and some sweetener into the egg white. Put the mixture in a bowl and let it set in the freezer for about 2 hours. Go through the substance with a fork every now and then so that the ice cream doesn’t get too hard.
Meanwhile, make the vanilla sauce: mix 4 dl milk with the beaten egg yolks and the flour. Add the vanilla essence and let the milk warm and thicken. Let it all boil for a while. Add sweetener to taste. Then add a splash of cold milk and stir well. This prevents a skin from forming on the sauce. Let the sauce cool in the refrigerator.
Serve the sorbet with the sauce, the rest of the fruit and a sprig of basil as garnish.
