Definition: what is skyr?
THE skyr is a dairy specialty between yogurt and fresh cheese. It is a milk heated, then fermented with lactic acid bacteria like yogurt, but drained to remove the whey and obtain a denser texture. Its recipe comes from Iceland where, according to the story, it was brought by the Vikings! Another particularity of skyr: it is made with skimmed or partially skimmed milk, and therefore has a very low fat percentage: between 0 and 2%. What are the differences with yogurt?
