A healthy and delicious recipe to make Scallops with herb sauce

Preparation
- Rinse and dry the scallops, keep them cool.
- Thimble the parsley and cut the watercress leaves flush
- rods without loosening the boot. Wash and drain everything. Boil a saucepan of lightly salted water and immerse the parsley and watercress in it.
- When they return to the boil, drain them and immediately immerse them in very cold water (preferably containing a few ice cubes). Drain them again and wring them out
- well in your hands.
- Put the wrung out herbs in the bowl of a food processor and add the garlic. Mix into a fine puree, adding a little skimmed milk
- little by little until you get a smooth consistency.
- Add the lemon juice, salt and pepper. Gently heat this sauce in a saucepan without boiling it and keep it
- warm.
- Coat the scallops with a drizzle of olive oil, salt and pepper them, and pan-fry them over medium heat, without too much searing, 2 minutes on one side and 1 1/2 minutes on the other side. Serve with the herb sauce and 150 g of cooked tagliatelle.
