Preparation
- Divide the mesclun among 4 deep plates. Preheat the grill.
- Cut the string into thin slices and brown them for a few minutes under the grill, watching them.
- Crush the hazelnuts and pecans, brown them in a pan without fat. Let cool and divide among the plates.
- Cut the fat-double into very thin strips. Heat the oil in a pan and fry it for 10 minutes over high heat with the marjoram until golden brown. When it begins to “hang”, pour in the vinegar, then peel off the juices with a wooden spatula. Let the vinegar evaporate.
- Cook the eggs for 5 minutes in a saucepan of water. Peel them, place them on the plates with the double fat. Salt and pepper, add a little hazelnut oil and the croutons.

A version of the Lyon “sapeur apron”, where the gras-double is breaded and served with a béarnaise. In fact, it is not greasy at all!
