Preparation
- Peel and chop the garlic. Mix with 2 tbsp. to s. olive oil. Cut the salmon into cubes, add the sauce and mix to coat each piece. Thread the fish cubes onto wooden skewers.
- Heat the walnut kernels for a few moments in a non-stick pan, without adding any fat or leaving them to blacken.
- Peel the kohlrabi, cut it in half vertically and slice each half into thin slices using a mandolin. (If you don’t have kohlrabi, you can substitute white radish for it.)
- Squeeze the lime, mix the juice with the mustard, honey and 1 tbsp. to s. olive oil, salt and pepper. Pour over the chopped cabbage and mix. Gently add the spinach leaves and walnuts.
- Form ricotta dumplings using two tablespoons, place them on the salad.
- Heat the rest of the oil in a pan and cook the skewers for about 8 minutes, turning them several times. Serve immediately with the salad.
