Ingredients

1/2 watermelon

200 grams of feta

4 sprigs of mint

1 small onion

100 grams black olives, pitted

100 grams cherry tomatoes

half bag of arugula

1 lime
-
splash of olive oil

salt and pepper to taste
Preparation
- Cut the melon into large cubes and the feta into small cubes.
- Roughly chop the mint leaves and cut the onion into very thin rings.
- Cut the olives in half and the cherry tomatoes too.
- Place arugula and watermelon pieces in a bowl and divide the mint, olives and onion rings over it.
- Add the cherry tomatoes and divide the feta over the salad.
- Grate the zest of the lime and mix it with the juice of half a lime, olive oil and salt and pepper to taste.
- Spread this dressing over the salad and finally add the remaining lime cut into wedges.
