250 grams lean ground beef

750 grams of courgettes

2 aubergines (500 g)

2 red and 2 green peppers

500 grams of tomatoes

1 onion

1 garlic clove

1 tablespoon oil

Salt pepper

1 teaspoon rosemary

1 teaspoon dried basil

½ l stock from a cube
Preparation
Wash vegetables. Cut zucchini, aubergines and peppers into cubes. Dip tomatoes in boiling water for a while, peel and cut into cubes. Clean and finely chop onion and garlic.
Heat oil in a frying pan. Brown the minced meat in this. Saute the onion and garlic and then add the vegetables. Season with herbs. Add the stock, put the lid on the pan and let it simmer for 20 minutes. Optionally, a can of tomato paste can be added. Serve this dish with mashed potatoes.
