Preparation
- Cook the quinoa according to the package directions, about 10 min.
- Cut the zucchini into tagliatelle using
- a peeler or a mandolin.
- In a sauté pan, brown the chopped red onion in olive oil.
- Add the zucchini, the pressed garlic clove, the chopped rosemary, salt and pepper. Sauté for 5 min.
- Mix the ricotta with the fresh goat cheese, eggs, quinoa, chopped basil (reserve 1 branch for decoration), lemon zest, salt and pepper.
- Pour the preparation into a gratin dish, then
- add (pressing them lightly) the pan-fried vegetables, the cherry tomatoes and the mozzarella balls. Sprinkle with pine nuts and bake for 25 min at 200 ° C (th. 6-7).
