Preparation
- Poach the salmon: immerse it in a pan of salted and peppered water; the water should cover the salmon well. Heat gently, bring to a simmer without hastening the process.
- When the water begins to simmer, remove from the heat and remove the salmon fillet with a skimmer. Remove the skin and crumble the salmon.
- It should not be overcooked: the flesh should be a deep pink inside.
- Meanwhile, cook the whole potatoes for 20 minutes in salted water, then peel them. Mash them with a fork
- with all the herbs, shallots and a little cider to soften the texture. Add the salmon and a little more cider to obtain a supple but firm texture.
- Tamp this mixture in a non-stick cake mold,
- cover it with stretch film and keep it for 12 hours in the refrigerator.
- Serve in generous slices, accompanied by beaten yogurt with a little dry cider, salt, pepper, lemon juice and some chopped fresh herbs.
