300 grams green lentils

200 grams smoked tofu

1 tablespoon oil

1 tablespoon wine vinegar

1 bunch of chives

1 red onion

bay leaves

thyme

parsley

salt and pepper
Preparation
Boil the lentils together with the bouquet garni (this is bay leaf, thyme and parsley) for 30 minutes in plenty of salted water. Cut the smoked tofu into cubes and fry for a while. In a small bowl make a vinaigrette with the nut oil and vinegar, pepper and salt. Pour this over the cooled lentils and sprinkle with chives. Finally, sprinkle the smoked tofu over the mixture.
