70 grams of sugar

15 grams liquid margarine

2 apples, cleaned and diced

1 teaspoon cinnamon powder

Preparation
Cook the apple cubes with 1 tablespoon of water in an ovenproof dish of 1 liter capacity (covered) in the microwave for 3-4 minutes on full power until a thick paste. Stir in the 40 grams of sugar and cinnamon and leave the purée covered.
Separate the eggs, beat the yolks with the sugar until foamy and beat the whites with a pinch of salt until stiff. Lightly fold the yolks and whites with a spatula.
Melt the butter in a shallow dish of 20 centimeters in diameter (uncovered) in the microwave on full power for about 1 minute. Add the egg mixture and let the omelette (uncovered) set in the microwave at 70 percent power for 6-8 minutes. Let the omelet rest (covered) for a few minutes.
Meanwhile, heat the apple (covered) in the microwave for 1 minute on full power. Divide the sauce over half of the omelette and fold over the other half. Garnish with sifted icing sugar and cinnamon.
