Sometimes it is difficult to stick to the weekly menu. Your head wants to, but your stomach is screaming for pizza. The solution? Cauliflower pizza!
Ingredients

1/2 cauliflower

1/2 bell pepper (any color)

50 grams of grated cheese

1 egg

2 teaspoons oregano

pinch of salt and pepper

Pastasauce

2 tomatoes

Mozzarella

1 red onion

50 grams of grated cheese

Preparation
- Preheat the oven to 180 degrees Celsius.
- Cut and wash the cauliflower.
- Grind it fine in the food processor
- . After this, cook the cauliflower in the microwave for about 4 minutes.
- A lot of moisture is released during cooking.
- That is why it is useful to have a clean tea towel ready, which you can use to wring out the cauliflower well.
- Then mix the cauliflower together with the egg, the oregano, 50 grams of cheese and a pinch of salt and pepper until it becomes a good whole.
- Knead the dough briefly and make an even base on a lined baking tray. Press it well with fingers or with a spoon.
- The bottom will now go into the oven for 15 minutes. When the bottom is golden brown, take it out of the oven.
- Brush the bottom with the (homemade) pasta sauce and cover with the sliced tomato, mozzarella, sliced bell pepper and grated cheese.
- Bake in the oven for another 5 to 10 minutes and garnish with fresh basil and arugula.
