You can easily make pancakes with vegetables. With broccoli for example! These broccoli pancakes are highly recommended. With a delicious feta dip!

300 grams broccoli

3 eggs

50 grams almond flour

1 tablespoon grated Parmesan cheese

75 grams of feta

3 tablespoons of Greek yogurt

sprig of parsley or coriander
Preparation
Finely chop the broccoli in a food processor (or grate it finely). In a large bowl, mix the broccoli with the eggs, almond flour, cheese, salt and pepper. Heat a little butter in a frying pan and bake 8 small pancakes from the batter. You can fry them in the pan with 3 at a time. Let them cool and pack them in a container or aluminum foil. Make a feta dip by mashing the feta and mixing it with the yogurt. Season with salt and pepper and a drizzle of olive oil. Sprinkle with chopped parsley or coriander.
Greek yoghurt
Serve the broccoli pancakes with a dip of feta and Greek yogurt. This yogurt has a nice creamy taste because moisture has been extracted during production. So a kind of hangover. That’s what makes the yogurt so thick.
