handful of lamb’s lettuce, watercress, arugula or a few lettuce leaves

1 cooked beetroot

2 tablespoons dairy spread

4 skewers
Preparation
- Cut the top crust off the sandwiches and flatten the bread with a rolling pin.
- Wash the lettuce and pat it dry.
- Peel the beetroot and coarsely grate.
- Spread the dairy spread on the bread and top with lettuce and grated beetroot.
- Roll up the bread and secure with skewers.
