On a sunny summer day you don’t feel like a sandwich with sweaty cheese. The temptation is great to satisfy the hunger with a calorie bomb such as an ice cream or a snack. Very tasty, but not really healthy. Therefore a delicious recipe for a healthy picnic.

350 grams waxy potatoes

juice of 2 lemons

2 tablespoons extra virgin olive oil

fresh black pepper

1 clove of garlic

1 bag finely chopped watercress (about 150 grams)

1 ripe avocado

2 spring onions

175 grams of shrimps
Preparation
Peel the potatoes and boil them for about 25 minutes. Drain and let them cool until lukewarm. Roughly chop the potatoes and place them in a large bowl. Drizzle with the juice of a lemon and a tablespoon of extra virgin olive oil. Sprinkle generously with fresh black pepper and squeeze a clove of garlic on top. Toss everything carefully. Wash the watercress and drain well.
Cut the avocado in half and remove the pit. Peel the avocado and cut it into thick slices. Sprinkle with some lemon juice and put them in the bowl with the potatoes. Finely chop the spring onions and add them to the salad, along with the watercress and shrimp. Season the salad with pepper, the rest of the lemon juice and 1 tablespoon of extra virgin olive oil.
