Preparation
- Cut the goat cheese into slices, then cut them in half. To book.
- Cut the quail eggs in half. To book.
- In a skillet, brown the gizzards for 5 minutes.
- On a bed of oak leaves, place the duck breasts, the hot gizzards (cut them in half if they are too large), the pieces of goat cheese and the quail eggs. Sprinkle with pine nuts, lightly crushed hazelnuts and a few leaves of fresh tarragon.
- Serve immediately, accompanied by vinaigrette.
