Preparation
- Take 3 strips of zest from the lemon. Immerse them in a small saucepan of boiling water for 30 seconds, drain, repeat the operation with clean water and then drain again. Cut them into thin strips.
- Put the papaya flesh in the bowl of a food processor with the ginger, the juice of a lime, the chili and 2/3 of the zest.
- Mix finely. Serve in cups and sprinkle with lime zest.
