Good food and still watch your cholesterol, that is possible with this recipe from the book Healthy eating to lower your cholesterol. Healthy food doesn’t have to be boring! These fish cakes are rich in all kinds of flavors. Unlike most fish cakes, they are not fried and are therefore easy to digest. If desired, add extra chili pepper for a bit more spiciness.
Ingredients

approx. 450 grams filleted salmon

1 red chilli, roughly chopped (without the seeds, if you want them less spicy)

juice of 1 lime or 1⁄2 lemon

1 egg (or as much to make a cohesive mixture)

piece of ginger root of about 2.5 cm, grated

optional 2 teaspoons Thai fish sauce

2 teaspoons salty low-salt soy sauce

2 stalks of lemongrass

4 spring onions, cut into rings

handful of coriander leaves, finely chopped

2 tablespoons vegetable oil
Preparation
Cut the salmon into cubes and place in a food processor or blender with the chili pepper, lime or lemon juice, egg, ginger root, fish sauce and soy sauce if desired. Turn until a coarse fish mince is obtained.
Remove the tough outer layers of the lemongrass (up to the layer that can be easily cut). Roughly chop the lemongrass and add it to the mixture in the food processor or blender. Let the mixture run for 1 minute more.
Mix the spring onion and coriander with the minced fish.
Shape the salmon mixture into balls and flatten them slightly. Heat a large frying pan on the stove and add a dash of oil.
Fry the fishcakes three at a time for 2-3 minutes on each side. Don’t slide them back and forth through the pan until they’re cooked through, as there’s little fat and no bread to bind it into the mincemeat, making it break down easily. Add an extra splash of oil if necessary.
Serve the fish cakes warm.
