The recipe for chocolate cake without butter and without gluten
Ingredients for 6 to 8 people : 100 g of organic dark chocolate, 100 g of organic zucchini, 2 organic eggs, 40 g of coconut blossom sugar or whole grain sugar, 1 tbsp. to s. unsweetened cocoa powder, 30 g of gluten-free flour (e.g. buckwheat flour), 1 pinch of baking soda, coconut or chopped hazelnuts, almonds, sesame seeds (in option).
Preparation time: 15 minutes + 30 to 45 minutes of cooking
Preheat the oven to 180°C. Melt the chocolate. Peel the zucchini and grate it finely, then drain and reserve in a bowl.
Separate the whites from the egg yolks and whisk the yolks alone with the sugar. Add the cocoa powder, mix, then add a little grated zucchini.
Then add the buckwheat flour and the cooled melted chocolate (keep 3 tablespoons of chocolate for the topping at the end!), and mix well.
Add the rest of the grated zucchini and mix.
Add the pinch of baking soda.
Beat the egg whites until stiff and gently incorporate them into the mixture.
Pour the mixture into a mold and put it in the oven at 180°C for 30 to 40 minutes (remember to prick it regularly with the tip of a knife to check cooking).
Once the cake is cooked, wait until it has cooled before unmolding it, then cover it with the melted chocolate you have reserved.
You can also add coconut, chopped hazelnuts or almonds, sesame seeds… as you wish.
