Paris mushroom risotto recipe
Ingredients for 4 persons
- 250 g of button mushroom
- 300 g of round rice
- 1 onion
- 1 garlic clove, chopped
- 10 cl of semi-thick cream
- 75 cl of vegetable broth
- 2 tbsp. grated parmesan
- 2 tbsp olive oil
- Salt pepper
Preperation
- Wash and drain the mushrooms, slice them and brown them in half the olive oil with the chopped garlic. Cook for about 10 minutes then set aside.
- In a dish, put the rest of the oil, then the chopped onion and cook for about 3 minutes. Add the rice, cream and mushrooms. Mix well.
- Gradually add the vegetable stock, ladle by ladle, until the liquid has evaporated. After about twenty minutes, season with salt and pepper then continue cooking for 5 min. Remove from the heat and add the Parmesan.
- Mix well and serve.
