Ingredients
- 4 trout, gutted and prepared by the fishmonger
- 8 thin slices of Italian ham
- 500g parsnip
- 300g frozen peas
- 1 lemon
- 10cl of semi-skimmed milk
- 40g sesame seeds
- 3 tbsp. to s. chopped parsley
- 3 tbsp. to s. chopped chives
- Salt pepper
Preperation
- Squeeze the lemon.
- Mix the herbs, garnish the trout and wrap each in two slices of ham.
- Place them in the baking pan of the oven covered with baking paper, sprinkle with sesame and cook for about 25 minutes.
- Peel the parsnips, cut them into slices, cook them in salted water for about 20 minutes with the peas.
- Drain, pass through a vegetable mill and incorporate the milk.
