approx. 400 grams of pork tenderloin

160 grams of uncooked rice

1 mango

1 tablespoon brown sugar

2 tablespoons vinegar

piece of ginger root (± 1 cm)

2 tablespoons liquid margarine

sambal (to taste)

Preparation
Peel the mango and cut the flesh into pieces from the pit. Also peel and grate the ginger root. Place the mango, ginger, sambal, caster sugar, vinegar and 0.5 l of water in a saucepan and bring the mixture to the boil. Boil gently for about 10 minutes.
Meanwhile, season the pork tenderloins with salt and pepper as desired. Take a large frying pan and heat the margarine in it. Brown the fillets on both sides and let them cook on the inside.
Puree the mango mix in a food processor, blender or immersion blender and add extra water, salt, pepper or sambal as desired. Reheat the sauce for a while.
Serve the pork tenderloins in slices on a plate and add the sauce. Delicious with (curry) rice and a mixed salad.
