Preparation
- Coat the filet mignon with mustard. Heat 2 tbsp. to s. olive oil in a casserole dish and brown the fillet on all sides. Then add the white wine, cover and simmer over low heat for 25 to 30 minutes.
- Meanwhile, peel the carrots, cut them into slices, then steam them for 15 minutes. Mash them with a potato masher or a fork, adding the cumin, 3 tbsp. to s. olive oil, a little salt and pepper.
- Present the filet mignon on the carrot purée and serve immediately.
Health tips
Cooked carrots are friends of the sensitive intestines. And if, in addition, you add cumin to them, that’s a bonus: it fights very effectively against flatulence.
