Preperation
- Cook the beetroot with honey and citrus juices for ten minutes then mix.
- Blanch the egg yolks with the sugar, add the mascarpone and whisk for 1 minute, add the cottage cheese, lime zest and stir gently.
- Whip the 2 egg whites that are not too firm and incorporate into the mixture.
- Place a little beetroot coulis at the bottom of each glass, put a little appliance on top and repeat the operation a second time.
- Decorate the glasses with lime segments and a few raw or cooked beetroot sticks and a few drops of coulis.
