
Since stews normally consist mostly of potatoes, they contain quite a lot of carbohydrates. This way you lower the carbohydrate content of a stew.
Preparation
Change the ratio:
- Take more vegetables and less potatoes.
- For example, if a recipe contains 800 grams of potatoes and 600 grams of vegetables, make the recipe with 500 grams of potatoes and 800-900 grams of vegetables.
Replace the potatoes:
- If you replace (part of) the potatoes with celeriac, parsnip, cauliflower or pumpkin, you reduce the carbohydrate content. The more of the potatoes you replace, the greater your carbohydrate gain.
Tips:
- Try a mix of different vegetables. Tasty combinations are diced bell pepper with the kale or endive stew. Cubes of carrot through the sauerkraut. Or enrich a stew with some raw spinach or arugula. Just before serving, for example, add this to the stew or stew of string beans for an extra bite.
- If you use more vegetables, you will need less moisture when making the stew. Do not add milk or stock until last.
