Preparation
- Cut the smoked trout into thin strips.
- Melt half the butter in a sauté pan. Brown the finely chopped onions. Pour in the rinsed and drained rice, mix and add the white wine. When boiling again, add a little court-bouillon and stir. Wait until the liquid is absorbed.
- Pour the rest of the court-bouillon in small amounts, so that the rice absorbs it as you go.
- Finish by pouring in the lemon juice, the rest of the butter and the chives. Salt, pepper and mix.
- Divide the risotto between deep plates and cover with smoked trout and parmesan shavings.
