Preparation
- Place 4 cups or verrines in the refrigerator.
- Whip the egg yolks and the sugar in a bowl until whitened, then incorporate the mascarpone and continue to whip until obtaining a very smooth cream.
- Reserve in the fridge.
- Peel the peaches, collecting the juice in a bowl containing the Banyuls wine, then cut the flesh into pieces and mix it into a puree.
- Take the cups or verrines out of the refrigerator. Place 2 cookies soaked in juice at the bottom of each cup.
- Add the peach puree, then 2 other cookies placed perpendicularly.
- Cover with the mascarpone mixture and place the tiramisus in the refrigerator for 4 hours.
- Sprinkle with a cocoa veil before serving.
To note : this is obviously a recipe for adults. For the children’s version, soak the cookies in the juice of the peaches stretched out with a little apricot juice.
