When we talk about healthy food, we often think of boring raw vegetables, vegetables without sauce and potatoes without gravy. However, that time is long gone! With a little creativity you can make healthy, but above all tasty, dishes in a short time.
Ingredients
-
1.5 liters of water
-
2 vegetable stock cubes
-
100 grams of mushrooms
-
50 grams dried whole wheat pasta
-
4 peeled tomatoes
-
3 thin leeks
-
2 spring onions
-
1 fennel bulb
-
1 stalk of broccoli
-
1 red bell pepper
-
1 clove of garlic
-
4 sprigs fresh parsley
-
5 sprigs of fresh chives
-
salt and pepper
Preparation
Cut the leek and spring onions into rings and mince the garlic. Cut the fennel bulb, bell pepper and tomatoes into cubes and the broccoli into florets. Place all vegetables in a pan and add the water and vegetable stock cubes.
Bring it all to a boil and let it simmer for 10 minutes. Then add the whole wheat pasta. Let the soup cook for another 10 minutes, so that the pasta is cooked. Season the dish with salt, pepper, chopped parsley and chopped chives.
And behold: a tasty meal soup in just 35 minutes!
